Wasabi Tuna Asian Salad

Non-stick cooking spray

2 tsp olive oil

2 tsp fresh ginger root, grated

2 cups (18 medium) sliced mushrooms

Slice the mushrooms and chop the bok choy and if required, remove any remaining fat on the pork. Cut the pork into ½ inch thick chunks and grate the ginger root. Set your skillet to medium heat and put on the nonstick cooking spray. Toss the ginger root in the skillet and sauté for a couple of minutes. Add the mushrooms and bok choy and if necessary, use some more of the nonstick spray.
